docs: Kconfig: fix defconfig description

Commit 2a86f66121 ("kbuild: use KBUILD_DEFCONFIG as the fallback
for DEFCONFIG_LIST") removed arch/$ARCH/defconfig; however,
the document has not been updated to reflect this change yet.
